Dad’s noodle recipe:
Ingredients:
- Olive

- Spring
onions
- Ginger
- Coriander

- Soy

Prep
time: 45 mins – 1 hour
Serves: 4 – 6 people
Method:
1. First you need to prep all your vegetables. Finely dice a whole bag of chilies and peeled ginger. Open up your coriander bag and pick off a good handful of leaves and put them to the side (as you’ll be using them for garnish later). With the remaining coriander, further dice it up. Lastly wash your spring onions, top and tail them and dice them in good chunks which you can vary depending on your preference.
2. Grab yourself a decent sized pan and coat the base generously in olive oil. Throw in your finely diced chilies, ginger and coriander. Next grab your Chinese 5 spice and add into the pan 2 heaped teaspoons as this creates the overall flavour of the dish and then stir well.
3. Next add in some diced chicken, the amount can be depending on your preference but I recommend 3-4 chicken fillets. Stir your diced chicken into the pan.
4. Now the cooking process begins. Turn up the heat and start to cook the chicken and the vegetables. When the chicken is fully cooked all over, add in ½ a bottle of Soy sauce and 3 tablespoons of honey which will sweeten the dish.
5. At this point, put some noodles on boil and time for around 4 minutes or however long your noodles take. At the beginning of the 4 minutes, throw in your diced spring onions and stir and cook until the timer is up.
6. After the 4 minutes is up take the sauce off the heat and dish out a generous pile of noodles to your liking. A tip to enhance the flavour of this meal is to salt and pepper the noodles on the plate and you could even add a drizzle of lemon sauce which my dad does.
7. Lastly, dish out your sauce onto your noodles and with the coriander leaves you kept to the side, sprinkle it on top for garnish. Have fun washing up and enjoy!

can easily make this recipe vegan friendly by switching out the chicken
with tofu and the honey with golden syrup!
